Nutrition Tip

For a leaner option, use skinless chicken breasts, and place them with the spices, red wine and bay leaves into a sealed roasting bag. Cut two small holes at the top of the bag. Place the chicken bag among the rest of the lightly roasted vegetables and roast at 200˚C for 25 - 35 minutes.

Instructions

  1. Arrange onion wedges, celery and grapes in a roasting pan, then toss with the balsamic vinegar, sherry, Robertsons Garlic & Herb and olive oil.
  2. Heat the remaining olive oil in a frying pan over high heat and brown the chicken pieces, skin-side down, for 15 minutes or until deep golden.
  3. Add the chicken, skin-side up, to the roasting pan with the onion and grapes. Sprinkle with Robertsons Chicken Spice. Add the red wine and bay leaves.
  4. Roast for 30 - 45 minutes or until the chicken is cooked through and tender.
  5. Serve with mash and drizzle with the pan juices and a little extra balsamic vinegar.
