Ingredients
Flaked Fish:
- 300 g firm white fleshed fish fillets (skin & bones removed)
- 30 ml or 2 Tbsp Robertsons Spice for Fish
- 15 ml or 1 Tbsp Robertsons Garlic flakes
- 15 ml or 1 Tbsp Salted Butter or Ghee melted
- 5 ml or 1 Tsp Robertsons Salt
- 2.5 ml or ½ Tsp Robertsons Black Pepper
For the Dough:
- 375 ml or 1 ½ Cups All-purpose flour
- 5 ml or 1 Tsp Robertsons Salt
- 30 ml or 2 Tbsp Oil
- 125 ml or ½ Cup Water
For the Pocket Filling:
- 187 ml or ¾ Cup Plum Tomato, deseeded & diced
- 125 ml or ½ Cup Red Onion, diced
- 90 ml or ¼ Cup & 2 Tbsp) Tangy Mayonnaise
- 30 ml or 2 Tbsp chopped Coriander
- 60 g Plain Cream Cheese
- 30 ml or 2 Tbsp Robertsons Spice for Fish
- 4 to 6 Eggs
- Robertsons Salt & Pepper to taste
- 30 ml or 2 Tbsp Butter or Ghee for frying
Directions

Preheat the oven to 200 degrees Celsius.

Place the fish into a roasting dish, drizzle with melted butter or ghee and season with Robertsons Spice for Fish, Robertsons Garlic, salt & pepper.

Bake the fish for 20 to 25 minutes, remove from the oven and set aside to cool and roughly break the fish up into flakes.

Place the flour, salt, oil & water into a bowl and combine, kneading into a smooth ball of dough. Wrap the dough in cling film and rest in the refrigerator for 30 minutes.

Divide the dough into 6 equal balls, flatten and stretch it out into a rough square on a lightly floured or oiled surface to prevent sticking. (approximately 15 to 20cm squared)

Fill each dough square with cooled flaked fish, 1 Tbsp mayonnaise, 2 Tbsp diced tomato, 1 Tbsp diced red onion, 1 tsp chopped coriander, 10g cream cheese, 1 egg and finish off by seasoning with 1 tsp Robertons Spice for Fish spice, salt & pepper.

Get a cast iron or non-stick skillet onto the stove at a medium to high heat with some butter or ghee.

Fold the sides of the parcel in and with a spatula transfer to a hot non stick pan.

Assemble and toast each Fish Pizza Parcel for about 4 minutes on each side until golden.

Leave to rest for 5 minutes, cut into squares & serve with chilli sauce for dipping.
